Makes about ½ cup
4 tablespoons mustard seeds
2 tablespoons whole allspice
4 teaspoons black peppercorns
2 teaspoons dried chopped ginger root
2 teaspoons hot red pepper flakes
4 small bay leaves, broken up
4-inch piece of cinnamon stick, cracked into small pieces
2 teaspoons cardamom pods 4 teaspoons whole cloves
Combine
all the ingredients and store in an airtight container.
